1st & Fresh Catering opened its Chicago operation last October and specializes in breakfasts, lunches, and snacks for in-office meetings. Chef Matthew Bishop, who previously worked at four-star Italian restaurant Spiaggia, oversees the menu. Selections include themed box lunches such as the Fiesta in a Box—replete with a smoked turkey fajita wrap, chili-lime cucumbers, and a cinnamon cookie—or the chilled Silk Road Connections buffet, which offers a spread of orange-glazed chicken with sesame spinach, teriyaki salmon on Asian slaw, and rasberry-coconut-almond bars. Box lunch costs range from $9.99 to $15.99 per head; buffet packages cost $14.99 to $29.99 per head. Breakfast, box lunch, and buffet packages require a 10-guest minimum, while snack trays and salad platters can be tailored to groups of eight to 30. Catering staff will provide unpacking and setup services.
