In 1980, after training in classical French cuisine, Jim Sanford started this operation, which caters outdoor events throughout the New York area. The company prepares New England clambakes for groups as small as 40 and as large as 1,000. Besides clams, Sanford serves lobsters, onions, potatoes, chicken, and linguica, a smoked Portuguese sausage, and cooks with steamers from Maine.
