LOS ANGELES At a press preview on Thursday morning, the Beverly Hilton debuted its plans for the Golden Globes dinner for about 1,300 guests, which will take place at the hotel on Sunday, January 16.
The name of the game will be California-centric ingredients, with the hotel's executive chef Suki Sugiura offering an appetizer of grilled eggplant with edamame and red pepper hummus with marinated artichoke and arugula. To follow will be an entree of grilled beef tenderloin with caramelized fennel marmalada and sauteed mild chili sesame crusted filet of Pacific sea bass, along with light cream of fine herb tumeric lemongrass sauce, black risotto parmesean, and young bok choy, haricort vert, and a baby carrot.
Executive pastry chef Thomas Henzi will dish up a dessert of California almond cake and chocolate royaltine crunch triangle and fresh berry tart, all topped and decorated with raspberry coulis, orange and vanilla chantilly creme, and a delicate chocolate buttery silhouette.
Mark Held of Mark's Garden will top the tables with arrangements of antique gold and rust-toned roses. He expects to use about 10,000 roses in all, with the flowers being flown in from South America. He calls the look “simple yet dazzling.”
Moët & Chandon is celebrating 20 years as the official champagne sponsor of the Golden Globes. To mark the occasion, the brand unveiled at the preview its limited-edition “Gold Awards Season Moet & Chandon Impérial” bottle. On event day, more than 1,000 Impérial mini bottles and 500 magnum bottles will be served on the red carpet and inside the ballroom.
In addition to the Golden Globes' official dinner, the hotel expects to host six other viewing and after-parties, including NBC Universal/Focus Features, In Style/Warner Brothers, HBO, Weinstein/Relativity Media, Sony Pictures, and AMC Television Network.
