| With Vanity Fair's party off, Elton John's Oscar-night AIDS fund-raiser is likely to be the most coveted ticket of the big evening. And because John's bash is known for its food—not to mention the A-list crowd it draws and the astronomical money it raises—we bring you an advance peek at the menu, offered by Mark’s Restaurant owner and chef Wayne Elias and co-owner Chris Diamond with their Crumble Catering team, including 150 servers, kitchen staff, and bartenders.
Hors d’oeuvres will include Napoli chicken Milanese with caper-lemon aioli; chicken-apple sausages wrapped in puff pastry with spicy brown mustard; and Colorado lamb medallions with horseradish-cauliflower tapenade. Guests will have an entrée choice of steamed fillet of sole filled with lobster mousse and asparagus tips with herb sauce or beef tenderloin in herb crust with red-wine sauce and almond duchesse potatoes.
For dessert: bitter chocolate mousse with raspberry ragout, plus the likes of macadamia heart cookies dipped in dark chocolate and mini tiramisu espresso cups at buffet stations.
