Rick Royce got his start in the catering business in 1984 and now does more than 200 events annually. His team prepares hot dogs and hamburgers, as well as ribs, chicken, steak, and seafood—all made with his signature rubs and sauces. Homemade side dishes include barbecued baked beans and potato salad.
