Since 2000, chef Gary Arabia has catered to entertainment executives, movie and TV wrap parties, and large Hollywood fetes for as many as 3,000 people. His menus fuse Pacific Rim, French, and regional American food influences. Specialties include curried chicken with toasted almonds and raisins, Vietnamese steak wraps with spicy lime juice, and Louisiana crab cakes with smoky mango salsa. Clients include MTV and Sony.
