In 2011, Nicolas Matar and Mary Catherine and Donald Mikula opened Salinas, a 90-seat Spanish tapas restaurant in Chelsea. To complement the fare from chef Luis Bollo, the design features a custom blue stone fireplace, limestone-covered walls, and Brazilian walnut flooring. In addition to the main dining room and a tapas room and bar, Salinas offers a 35-seat garden.
