Set to debut in early June is Proof, a chic restaurant and wine bar in Penn Quarter. The venue will feature wide plank-wood floors, exposed-brick walls, and a 23-foot handcrafted pewter bar imported from France. A Jerusalem stone entryway is also part of the design, and current plans call for four 42-inch plasma monitors, which will be a substitute for art (they’ll display the National Portrait Gallery’s collection). The 4,000-square-foot space will boast a modern American menu with Mediterranean influences, featuring small plates, cheese and charcuterie selections, flatbreads, and a raw bar. Wine will play a major role at Proof; the restaurant has plans for a visible 4,000-bottle storage space, and a state-of-the-art wine-serving system is in the works. The main dining room seats 84, the bar seats 35, and a private dining room will hold 12.
