Chicago Catering Company Serves Glowing Cotton Candy

Spun All Natural Confections is a new Chicago catering firm that specializes in one fat-free and gluten-free treat: cotton candy. Using organic sugar and either organic or natural flavors, founder Seth Bankier spins the treat in nearly 20 flavors including bacon salt, salted caramel, lemon-coconut, and truffle oil.

Catering to meetings, events, and corporate picnics—Bankier says he can service groups of "two or 2,000 or more"—Bankier has a process that allows him to switch flavors to serve different treats from the same machine. For larger events, he will typically spin one flavor for five to 15 minutes, then switch to another flavor.

Because Bankier doesn't use artificial flavors or colors in his cones, all of his cotton candy is white. To tie the treat back to an event's color scheme, though, he can use colored cones and plastic bags or wrap. Recently, he's started using colored, nontoxic glow sticks as cones. The glow sticks have strings tied into their ends so that guests can wear them as necklaces after they've finished their cotton candy. "It looks very cool in a dimly lit environment," Bankier said. Smaller office events typically start at $150 to $300, depending on the number of hours and guests at the event.
