Would you serve your guests something that's been potted in soil, then spritzed with perfume? Chefs at Sixteen, the Michelin-rated restaurant at Trump International Hotel & Tower Chicago, have no problem doing soโthough the "soil," we should note, is actually made with black olives.
The current menu, dubbed "Summer Market," is inspired by farmers' markets. Dishes from executive chef Thomas Lents include a "living salad" made with several forms of ingredients such as soy beans, including egg tofu, raw edamame, and soy paper. At the table, the salad is spritzed with nasturtium "perfume" (or oil) and ice vinegar.
