Earlier this month, Simone's overtook a 100-year-old structure in Pilsen. The spaceโwhich, in past incarnations, has housed a garage and a Curves for Women gymโnow features quirky, recycled decor. Reconfigured pinball machines form booths, a former bowling lane serves as a bar top, and parts of old doors play into the bar stools.
The venue features two main spaces. In the front room, graffiti-filled walls surround a bar, a DJ area, and a series of booths. Containing old lab equipment and chemistry tables, a 1,000-square-foot back room known as Simone's Lab offers its own bar and performance area. The space, which was designed specifically for events, can seat 75 or host 120 for receptions.
Simone's menu offers salads, burgers, and pizzas, and a roster of specialty drinks includes the Grey Goose vodka "Double Bubble" cocktail, which features a Pop-Rocks rim.
