At the South Beach Wine & Food Festival this February, chef Stefan of Chef Stefan Global Gourmet introduced Himalayan pink salt crystals. The 2,000-year-old, pretty pink sea salt is mined from deep in the Himalaya Mountains of Pakistan and has a delicate, almost sweet flavor. For a novel alternative to the typical saltshaker, place one or two salt crystals—along with a mini grater—at each table setting so guests can season their food with a personal salt rock. Or place a pile of salt rocks in the center of the table and light them from underneath to create an extraordinary centerpiece. There are more than 15 kinds of bulk salt available in a variety of colors, which can be purchased through chef Stefan. Bulk prices range from $5 to $20 per pound, with no minimum order. The Himalayan pink salt can also be sold as a solid round or rectangular disc (approximately five- to six-inches long, 1/2-inch thick) for $12 each with a 10-piece minimum. —Shari Lynn Rothstein
