Beyond the Fire: How 5 Brands Ignited the Heritage Fuego Fiesta

Goya Foods, Diplomático, Angel’s Envy and other brands got creative with food and beverage to grab guests' attention at 2021's Cochon555 Heritage Fuego culinary experience.

CORAL GABLES, FLA—The 11-year-old Cochon555 tour touched down in the courtyard of the Biltmore Hotel in Coral Gables on Nov. 21. The outdoor affair was illuminated by string lights, fire dancers and Latin beats, which complemented an endless array of live-fire bites and trendy pours. Twenty of South Florida’s top chefs gathered alfresco to commemorate Heritage Fuego, presented by Goya Foods, a celebration of global and sustainably sourced cooking for a melting pot of hungry (and thirsty!) South Florida attendees. 

From barbecue beef tongue a la Beaker & Gray, to braised pork belly courtesy of Biltmore Hotel, to vegan-friendly grilled bananas from Phuc Yea, there was a flavor for every brand of foodie to savor. Plus, a percentage of the proceeds from the sold-out event were donated to Overtown Youth Center, a childhood development program that supports at-risk youth and their families.

To kick off Heritage Fuego, Diplomático Rum hosted an intimate Masterclass-style event for 30 guests within one of the Biltmore Hotel's ballrooms for a rum-and-food pairing experience led by one of their local, Miami-based brand ambassadors. Rums Diplomatico continued to flow freely during the main event, where the Venezuelan distillery mixed up craft rum cocktails from a branded bar setup.

Visit Cayman Islands
Personalized Tortuga rum cakes were a fun and flavorful way to transport event guests to the Caribbean for Visit Cayman Islands. Guests were invited to choose from a variety of flavors, including Signature Original, coconut, pineapple and Florida Key Lime.

Goya Foods
Goya Foods took its presenting sponsorship to great heights with logo projections gracing the courtyard. Upon entry, guests were treated to their own branded wine glasses (pictured) paired with custom Drink Stainless straws featuring the Heritage Fuego's logo to refresh and wash down their bites. Next, for seamless integration into all culinary offerings served, Goya Foods provided all 20 participating chefs with seasonings and spices for each chef to use to optimize flavor. In addition, Goya Foods executive chef Fernando Desa treated guests to grilled, succulent and spicy Heritage Breed lamb chops prepared over an inviting live fire.

From bellinis and margaritas to mimosas, palomas and sangria galore, guests sipped Miami Cocktail Company's cooled-down, organic spritz canned cocktails. Each of the ready-to-drink, single-serve, low-calorie craft concoctions were chilled on ice from a 10-foot bar cart build-out, which featured a nifty sunken cooler where guests could take their own brightly colored cans to pop open.

Angel’s Envy
Angel’s Envy attracted guests with a DIY, smoked-whiskey cocktail experience. Incorporating live smoke straight into each guest's glass, the individual libations were served from a cocktail-smoking box that provided a visually striking way to add flavor and aroma to each drink.
