Here's a closer look at Canada's newest eateries, drinking spots, hotels, conference areas, private rooms, and other spaces available for events this spring. The new and renovated Canada venues are available for corporate parties, weddings, fundraisers, outdoor functions, business dinners, team-building activities, conferences, meetings, and more.
Fairmont Pacific Rim

Vancouver's Fairmont Pacific Rim debuted its Fairmont Gold experience in March after an extensive renovation. The overall design draws inspiration from the city's surrounding forests and natural landscapes—fitting, as the property offers floor-to-ceiling windows with breathtaking views of the North Shore Mountains. Amenities on the Gold floor include a dedicated 24/7 concierge team, local culinary and cocktail activations, and wellness-focused treatments. The property as a whole offers 15,000 square feet of meeting space, including the 6,851-square-foot Star Sapphire Ballroom, which can accommodate up to 500 guests.

Union Hotel

Earlier this year, Toronto welcomed Union Hotel just steps from historic Union Station in the heart of the city's financial district. At the 189-room property, guests and visitors will find a subtle focus on literature. The hotel even has a partnership with the Giller Prize; each room contains a Giller Prize-listed or -winning book. There's also an expansive library on site near the front desk. Other spaces for connection include the Humble Donkey Cafe and Lounge, a communal table, and private work booths. The 6ix is a social space with outdoor courtyard access that's available for private events.

Marriott Downtown at CF Toronto Eaton Centre

On April 1, Marriott Downtown at CF Toronto Eaton Centre officially unveiled its newly renovated meeting and event space. Located in the heart of downtown Toronto, the hotel offers over 26,000 square feet of meeting space, two pillarless ballrooms located across from one another, a large prefunction space, and 10 breakout rooms. The new interior design was inspired by the city’s skyline and natural brick stones. Upgrades include a new lighting system, digital signage, and an app-based service for real-time guest support. Water refill stations are also available on every level to help promote eco-friendly practices for a greener event experience. For events, the hotel also offers PAR BAR, a sports simulator bar and lounge with 20 different Topgolf games.

Le Fou Fou

European-style food hall Le Fou Fou opened in September 2024 in the heart of Montreal's new Royalmount development. The space boasts two a la carte restaurants, 10 culinary concepts, and three individually themed bars. A custom-built ordering system, in partnership with Lightspeed and 5Loyalty, means diners can order dishes from different vendors delivered to the table on one check. The space hosts year-round special programming like culinary collaborations, live musical performances, art showcases, and cultural event screenings. For private or semiprivate events, Le Fou Fou can host gatherings like cocktail receptions on its outdoor terrace, intimate tasting dinners, or large-scale corporate events. The space spans 35,000 square feet and can accommodate 15 to 900 guests.

Hard Rock Hotel London, Ontario

Hard Rock Hotel London, Ontario is now open inside 100 Kellogg Lane in the heart of London's Old East Village. The newly constructed hotel features 164 guest rooms and specialty suites offering floor-to-ceiling windows that showcase the vibrant energy within the complex. For bleisure travelers, family-style guest rooms feature separate rooms with bunk beds. The signature Rock Star Suite features a plush living area and bar, exclusive music-inspired touches, and high-end amenities like a private kitchenette. F&B concepts include the GMT-5 lobby bar (pictured), Sessions Restaurant & Bar, and 1913, a speakeasy named after the year the Kellogg's Factory opened. Event space spans more than 13,000 square feet. Planners can also conveniently work with 100 Kellogg's many dedicated event spaces; the complex can accommodate up to 1,000 guests.
