Joining the ranks of Toronto food businesses with a committment to sourcing mostly local and seasonal ingredients, Courgette Catering creates southern Italian and French-influenced menus. The new company services downtown and the Greater Toronto Area, and can prepare meals (including breakfast) for as many as 50 guests and hors d'oeuvres for 75 to 100 people. For a recent corporate meeting, chefs Marco Avolio and John Estabillo served white wine coq au vin and a filo-crusted quiche with Ontario smoked cheddar and leeks. Charcuterie and antipasti-—including grilled eggplant scapicia—are other popular options. Servers, table settings, and wine suggestions are available, too.
