
Gianluca Aresu is an artist: He can transform a watermelon into a decorative flower, carve intricate patterns into blocks of Parmigiano-Reggiano and work even more magic on pastries and chocolates. He specializes in modern pastry decoration techniques, chocolate and praline manufacturing, ice and fruit sculpture and marzipan marbling. Available year-round, Aresu needs at least a month's notice (he lives and teaches in Cagliari, Sardinia), and he doesn't come cheap: His fee is $1,000 per day, excluding travel, food and hotel accommodations. --Suzanne Ito
