Gneiss to Replace Grayz in January

Come January, Michelin-starred chef Gray Kunz will no longer have a brick-and-mortar presence in New York. Earlier this year Kunz closed his Time Warner Center eatery Café Gray and today the owners of Grayz announced that the chef will no longer be associated with the Midtown dining site when they unveil its new incarnation, Gneiss, in early 2009. According to a press release sent out this morning, Gneiss is to be a restaurant with a new concept, and chef Martin Brock will oversee the cuisine.

Kunz, however, won't be disappearing—the chef has some plans in the works, including an expansion to Asia and some stateside projects. “In addition to Asia, current market conditions are opening opportunities for a new location in New York City,” Kunz stated in the release. “I am also planning the launch of new initiatives focused on nutrition and wellness and developing green protocols for chefs.”
