Since then, trade restrictions have caused the price of beluga caviar to skyrocket. (One purveyor offers 4.4 ounces for nearly $750.) The cheapest alternative is Soy Caviar. Available in beluga, sevruga, and osetra flavors, it retails for $15 for a 4.4-ounce jar.
Mid-Price
A popular alternative to caviar from .phpian Sea sturgeon are the eggs of American paddlefish from Tennessee and Kentucky, which have a briny flavor, or the Missouri River hackleback, which offers a buttery, nutty flavor. Philadelphia-based Caviar Assouline (800.521.4491) offers all three: prices range from $70 to $80 for a four-ounce jar.
Splurge
Get Petrossian prestige without .phpian Sea sturgeon prices with the Paris-based caviar purveyor’s new Alverta President variety, harvested from white sturgeon raised and farmed in California. The taste is similar to osetra. A 4.4-ounce jar costs approximately $450.
