The Royal Horse Show, one of the top equestrian events in the world, is held each year during the Royal Agricultural Winter Fair on the grounds of the Canadian National Exhibition (CNE). To mark the close of this year's show, sponsor Canadian National Railway (CN) threw a private dinner party for 46 senior company executives, including president and C.E.O. E. Hunter Harrison, in a private room at the CNE's National Trade Centre.
Caterer Gourmet Cuisine started the meal with a selection of appetizers, including oyster shooters, barbecued quail drumsticks, and rice cones with lobster, coriander, and mango. Best in show among the appetizers was a five-inch-high phyllo cylinder filled with a mixed green salad and topped with 12-year-aged balsamic vinegar. The main course featured grilled veal chops and a medley of root vegetables. Dessert was a crumble cookie crust with a chocolate mousse and caramel topping.
Mieka Ouellette, CN's coordinator of events, worked with Deborah Macfie, Gourmet Cuisine's director of sales, to give the tabletops an equestrian theme. Jockey caps decorated the neon light novelties from Chair-man Mills that illuminated the menu at each place setting. And every table featured a large ice centerpiece shaped like a horse from Iceculture. These embellishments complemented the room's permanent equestrian collection of bits, saddles, and jockey whips.
