6 New Venues in San Diego for Summer 2025 Meetings and Events

Take a peek at these buzzworthy restaurants, hotels, meeting and event spaces, and more recently opened in San Diego.

Here’s a closer look at San Diego's newest eateries, drinking spots, hotels, conference areas, private rooms, and other spaces available for events this summer. The new and renovated San Diego venues are available for corporate parties, weddings, fundraisers, outdoor functions, business dinners, team-building activities, conferences, meetings, and more.

Hotel del Coronado
Hotel del Coronado
In June, Hotel del Coronado completed a $550 million restoration, highlighted by the revitalization of its historic Victorian building and a range of upgraded event and group offerings. Key event spaces—including the historic Crown Room, Coronet Room, and Ocean Ballroom—have been meticulously restored, blending original architectural details with modern technology. The Victorian garden courtyard, fully returned to its original design, now serves as a scenic gathering space. New dining destinations like Nobu Del Coronado and Veranda offer oceanfront private dining opportunities, with Nobu’s 3,700-square-foot indoor-outdoor layout especially suited for events. The resort's broader transformation includes the Southpointe Event Center, featuring a 15,000-square-foot ballroom and adjacent lawn, plus updated guest rooms, meeting spaces, and amenities across the property.

Petco Park
Petco Park
As part of a multimillion-dollar renovation completed in March, San Diego’s Petco Park has unveiled newly reimagined event spaces within its iconic Western Metal Supply Co. Building. The renovation includes an upgraded Budweiser Loft and a completely transformed rooftop, now connected for the first time by a grand staircase to create a seamless, multilevel experience. The Budweiser Loft blends the building’s historic charm with refined hospitality touches like a renovated bar, premium lounge furniture, enhanced lighting, and an updated Foul Pole Suite. Upstairs, the 4,000-square-foot rooftop now offers expanded field views, private restrooms, a shaded trellis with overhead heating, two 16-by-9-foot video boards, and a new feature wall that lights up during celebratory moments. Ideal for groups of 300 to over 1,000 guests, the connected spaces offer a unique and flexible setting for private events, corporate gatherings, or game day celebrations with a true San Diego backdrop.

Starlite
Starlite
After a 14-month renovation, popular restaurant and cocktail bar Starlite—originally opened in 2006 by Tim Mays, Steve Poltz, and the late Matt Hoyt, veterans of the city’s music and arts scene—has reopened. Known for its low-lit atmosphere and role as a gathering spot for San Diego’s creative community, the restaurant and cocktail bar has been redesigned by Bells and Whistles in collaboration with new operator CH Projects. The remodel retains original architectural elements like the hexagonal entryway while introducing changes such as an expanded sunken bar, a redesigned dining room, and an updated upstairs patio with fire pits, added greenery, and a newly uncovered seating area with a waterfall. The refreshed design incorporates retro-futuristic elements and midcentury influences, updating the venue while nodding to its original character.

Slated to open later this summer, the Courtyard by Marriott San Diego Downtown Little Italy will bring more than 10,000 square feet of flexible event space to one of the city’s most dynamic and walkable neighborhoods. Just minutes from the airport and steps from top attractions like the Embarcadero, Gaslamp Quarter, and San Diego Convention Center, the new 334-room hotel is poised to become a go-to venue for weddings, corporate meetings, and social gatherings. The property’s event offerings include a variety of ballrooms, boardrooms, and meeting suites—each named in tribute to the surrounding community, such as The Amici Ballroom, The India Street Room, and The Cardini Boardroom. Additional on-site amenities include a skydeck pool, fitness studio, business center, and a restaurant and bar offering Mediterranean-California cuisine. Courtyard by Marriott San Diego Downtown Little Italy will be located at 1646 Front St., which today is home to The Little Italy Hotel.

Manchester Grand Hyatt San Diego

As part of a full-property transformation, Manchester Grand Hyatt San Diego has unveiled the reimagined Sally’s (pictured), its signature waterfront restaurant and the first milestone in a sweeping renovation effort. Located along the San Diego Embarcadero, the redesigned space, open since May, features an expanded open-air terrace with panoramic bay views and a menu rooted in Baja Med cuisine—blending Mexican and Mediterranean influences to reflect the city’s coastal culture. Designed with flexibility in mind, Sally’s now offers private, semiprivate, and patio dining options for groups ranging from 10 to 400 guests, making it a versatile setting for everything from business lunches to large-scale receptions. The refresh is part of a broader renovation that includes redesigned Seaport Tower guest rooms (open since June) and upcoming upgrades to all 1,628 rooms and suites, plus more than 320,000 square feet of meeting space, multiple dining venues, and two rooftop pool decks.

George's at the Cove
George's at the Cove
Following a recent renovation, George’s at the Cove in La Jolla has unveiled an updated look for its Level2 dining area and bar (pictured)—an indoor, open-air space known for its sweeping views of the Pacific Ocean. The refreshed space now features retractable awnings, new lighting and furnishings, and a high-top counter overlooking the water, offering a refined yet relaxed setting for group dining and cocktail-style events. With space for up to 74 guests, Level2 is well-suited for private gatherings that prioritize atmosphere and culinary quality, with menus crafted by George’s acclaimed kitchen team led by chef Trey Foshee. For larger groups, the restaurant also offers the famed rooftop Ocean Terrace, which holds 142, plus a fully enclosed private dining room on the first level with seating for up to 138—both complete with the same oceanfront backdrop that has made George’s a San Diego institution for more than four decades.
