Truffles: A Pricey Party Treat

We ran into the truffle king of New York at a recent event promoting the food and wine of Franche-Comte (the most eastern region of France) at the Delegates' Dining Room at the United Nations (catered by Restaurant Associates). Christopher Poron, president of Plantin (truffles importer for restaurants including Daniel and Alain Ducasse) is quite busy this time of year--the high season for Italian white truffles. At more than $1,850 a pound, truffles for an event with 300 people will cost you $12,000 wholesale (and that doesn't include waiters to shave the truffles onto your risotto). Compare that to a pound of Beluga caviar at $1,680.
