The Sleek New Republic of La Cienega

After two weeks of hosting special events (including an Oscar-related biggie with Vanity Fair), La Cienega’s Republic opened its doors to the public in mid-March. Executive chef Gabriel Morales (who also opened Bliss and the BOA Steakhouse) and chef de cuisine Mark Mittleman (the recent Beverly Hills Hotel sous chef) serve American fare in the main dining room—like grilled venison chop, bacon-wrapped bass, and “backyard barbecue-style” pork. They offer more casual fare in the bar, which is decorated with leather, granite, and python touches. The dining room’s striking decor includes a 20-foot- tall wine tower, a cylindrical fire pit draped in stainless steel chain mail, and waterfalls. A patio features sleek cabanas, a slate bar, and giant parchment- paper light fixtures. There is an additional private lounge for events, dubbed "The Venue," which seats 200 or holds 330 for a reception. —Alesandra Dubin
