Remaining true to her belief in using local ingredients and organic produce and meats whenever possible, she will customize menus and serve fare in biodegradable, sugarcane-fiber-based containers, plates, and cups—and yes, packaging can be customized with a logo. After an event, Lucid hauls away used wares for composting (for a fee of $75). —Mark Mavrigian
