Here's a taste of the Strip's newest steak houses and burger joints.
1. Cut: Wolfgang Puck opened this outpost of his Beverly Hills steak house at the Palazzo resort in March 2008. The 60-seat space features a private dining room with a retractable wall that opens to a wine display; an adjacent lounge seats 60.
2. Carnevino: Mario Batali and Joe Bastianich opened this Italian steak house at the Palazzo in January 2008. The main room holds 290, while the clubby, private Morelino Room seats 50.
3. Brand: The Light Group’s steak house and lounge opened in May just off the Monte Carlo casino floor. The 250-seat dining room features earthy colors and a lit ceiling canopy that looks like a pixilated cow print. A 50-seat private room can be divided in two.
4. BLT Burger: Laurent Tourondel’s gourmet burger house opened in the Mirage resort in July 2008. The 198-seat eatery combines end-grain wood, glazed lava stone, and brick. The menu includes burgers, fries, rings, and shakes.
