Taking the food truck trend a step further, Bernie's Burger Bus cooks and serves its fare out of a converted yellow school bus from "bus stops" all over town. In keeping with the scholarly theme, the menu is divided into sections like "Core Classes" and "Extracurricular." In 2014, Bernie's carefully modified its mobile business model for a brick-and-mortar restaurant, as well as an outpost at Reliant Stadium. While the presentation and dining experience at the permanent locations differ from the original, the food quality and schoolhouse inspiration are consistent throughout all three venues.

To respond to the changing needs of its guests, Houston's Hotel Derek introduced its new concept restaurant in the summer of 2014. Revolve Kitchen & Bar puts a fun, edgy twist on the typical dining experience by transforming the space throughout the day in conjunction with each meal service. At breakfast, patrons can opt for something quick from the coffee bar or a sit-down meal. For lunch, Revolve evolves into a venue suitable for impromptu meetings, complete with high-tech touches like smart TVs and even Wii gaming systems. When the sun goes down, new signage descends from the ceiling, turning the morning coffee bar into Tap & Pour, a pop-up craft beer bar.

Corner Table is the first restaurant in Houston to offer a menu specifically designed to accommodate paleo diners. The immensely popular diet plan is inspired by Stone Age humans, who ate only food they could hunt and gather. Thus, the paleo menu at Corner Table forgoes processed ingredients like grains and refined sugar in favor of wild game, fruits, vegetables, seeds, and nuts. Think rainbow trout with cauliflower and pistachios, followed by avocado chocolate mousse.
