Three-month-old catering operation Fired Up Chicago not only offers pizzas, meats, and side dishes—but can also transport its mobile wood-burning brick oven (and chefs in full whites) to events. The oven hooks up to the back of the company's red truck and can be set up in most outdoor environments, from backyards and forest preserves to city alleyways. The oven reaches 900 degrees in 40 minutes and retains heat for hours, baking traditional thin-crust pizzas in 90 seconds. Recipes range from basic (cheese, sausage, pepperoni, and veggies), to gourmet (horseradish-marinated salmon, goat cheese, and red onion).
Pricing is based on three-hour events, plus one hour each for set-up and clean-up. There is a $600 oven rental charge, as well as a $250 per chef fee, with a two-chef minimum). The package for basic pizzas is $11 per person, and $16 per person for gourmet versions. Meat and fish entrees, salads, and sides are also available. Entrees range from $12 to $20 each, salads are $38 to $65 each, and sides range from $32 to $45; Salads and sides each serve eight to 10 people.
