Palm Beach County has been undergoing a restaurant renaissance in recent months, much of it driven by the chefs themselves. Such is the case with Verdea, next to the Embassy Suite Hotel in Palm Beach Gardens.
There, chef James King has established a following with his seasonal, farm-to-table menus, in a classic American bistro setting.
Overall, the restaurant can accommodate 200 guests: The main dining room seats 52, the grand bar seats 30, and a private dining room can accommodate 80. Verdea's dedicated wine bar, featuring more than 250 varietals from small vineyards across the U.S., has seating for an additional 36.
Wines are available by the glass, flight, or bottle, and can be paired with small bites that include a charcuterie plate and artisanal cheeses.
Highlights of King's latest summer menu include La Belle Farm's seared foie gras, the Verdea seafood paella, and a central Florida heritage pork chop served with chimichurri. Limited versions of the dinner menu, based on the size of the group, are offered in the private dining room.
In addition, the full restaurant is available for buyout Sundays and Mondays.
