Hyatt Regency Orlando offers meeting attendees an opportunity to explore unique food pairings with its new “Spice Market” interactive dining experience. Guests choose from simple grilled items such as shrimp or chicken and then customize the flavor with dozens of options such as herbs, spices, nuts, dried fruit, pickled vegetables, dried chilies, and fresh coconut, all presented at the table. Catering staff can assist guests in creating suitable pairings.

Puff ‘n Stuff Catering has several new items on its menu that are easy for guests to eat while standing. The company’s new leek cheesecake, topped with arugula pesto, caramelized onions, and sweet grape tomato, is served in a pesto cracker spoon. There’s also a cold buckwheat crepe stuffed with Brie, red wine-poached fig, and Asian pear slaw, and a mini skewered lobster corn dog with creamy remoulade sauce served in a shot glass.

Turn guests into cowboys for a day by experiencing Westgate River Ranch’s new cattle drive teambuilding adventure. The excursion begins with breakfast at the ranch at sunrise, followed by a scenic guided horseback ride to gather the herd and drive it across the open land into cow pens. The activity ends with outdoor country-style lunch and lessons in whip-cracking and rope-throwing. In addition to cattle drives, more than a dozen cowboy-theme teambuilding activities are available, including a blindfolded saddle assembly competition and an outdoor adventure course.

Cuisiniers Catered Cuisine & Events is offering a new twist on the traditional Salad Niçoise. A genuine tuna fish can is filled with a mix of raw yellowfin tuna, haricots verts, imported anchovies, seasonal greens, a quail egg, and olive aioli.

Hilton Orlando is offering a new option for banquet meals that brings the energy and variety of a restaurant into a ballroom. The catering staff can create an elevated kitchen in the middle of the room that has four stations serving different menus. Guests seated around the kitchen and throughout the ballroom can order from any of the stations. For beverage service, three stations around the perimeter of the room offer craft beer, wines, and specialty cocktails.

Just Bars now has high-top and communal tables in more than a dozen looks that match the bars in its Designer Series. The new tables can come with a black or white top, and wireless LED lighting can be added. The high-tops seat four and the communal tables seat eight for a plated dinner and 10 people for cocktails.
