Restaurateur (and biz book author) Danny Meyer’s Union Square Hospitality Group (USHG) has announced plans to open Union Square Tokyo, a restaurant modeled on Union Square Café and situated within that city’s still-under-construction Tokyo Midtown complex. The venture is a partnership with the Japanese company Wondertable, which will own the restaurant; USHG is in a business licensing agreement with Wondertable and is consulting on the establishment. Chef Michael Romano of Union Square Café created the menu, and USHG partner David Swinghamer worked with architect Junpei Yamagiwa on the venue’s design. The restaurant is slated to open in the spring of 2007.
