Lyfe Kitchen's Unfried Chicken

For a healthier fried chicken catering option, Lyfe Kitchen offers "Art's Unfried Chicken," named after chef Art Smith. The chicken is coated with whole-wheat panko, seared, and served atop roasted Brussels sprouts, butternut squash, dried cranberries, cashew-cream sauce, and Dijon vinaigrette. The chicken can also be substituted with meat-free proteins from Gardein. Lyfe has locations nationwide, including Chicago; Palo Alto, California; and Boulder, Colorado.

Pinch Food Design
Known for his innovative approach to plating, Bob Spiegal is in constant demand to cater prestigious New York events, such as the Whitney Museum’s fall gala, New York Philharmonic’s opening in the park, and the Cooper Union gala. He embraces the idea of one-bite food served without traditional silverware and plates, making Pinch a go-to caterer for unconventional presentations.

Further emphasizing the popularity of the food station, sponsor Sterno set up s'mores stations as part of the event's luncheon on August 15. Guests could roast their own marshmallows over the Sterno flame, and then build their s'mores with the graham crackers and chocolate provided.

In April, Four Seasons Hotels & Resorts hosted a conference for all of its food and beverage directors in the Americas. The event, held at the Four Seasons Los Angeles at Beverly Hills, focused in part on the importance of sustainable, local, and organic ingredients in dishes served at all of the brand's hotels and resorts. In keeping with that theme, the design of the event showcased farm-to-table offerings in a farmer's market-style setup, complete with displays of colorful produce. Cyrille Pannier, executive chef at the Four Seasons Hotel Los Angeles at Beverly Hills, created the farmer's market display; he is one of three designated so-called 'wellness chefs' in the company.
