Why Subway Hosted a Fancy Five-Course Meal

The restaurant chain showcased its ingredients in unexpected ways with an immersive dinner experience in NYC.

The multisensory, invite-only dining experience held at Lightbox on Feb. 4 featured the fast food restaurant’s ingredients in unexpected ways with a five-course meal.

Lorri Christou, chief communications officer at Subway, explained that the experience “elevated the ingredients our guests already know and love from their local Subway restaurants with dishes that centered around Subway favorites, like tuna, banana peppers, pepperoni, and macadamia nuts.” 

For example, one course was spinach raviolo featuring salami, provolone, and baby spinach. The dish consisted of provolone-salami espuma (a light, airy foam), egg yolk, spinach puree, and black truffle. 

As guests dined, the room was transformed using tailored visuals and sounds. On the tables were also scent vials representing each dish. And an AI-powered cocktail experience during happy hour helped attendees identify which Subway-crafted cocktail best fit their personality. 

The internal Subway team worked alongside partners Circle Public Relations and FleishmanHillard to bring the experience to life. 

The dinner “was a creative, engaging way for media and content creators to experience Subway ingredients they know and love, and [showcased] the level of quality and freshness of these ingredients by reimagining them into elevated dishes,” Christou said.

“While this exact experience isn’t available at Subway restaurants, the same high-quality ingredients are—from our freshly baked bread to our crisp veggies and bold sauces," she added. 

The brand has no plans to host the experience elsewhere, but when asked about the company’s overall strategy, Christou said that Subway will “continue to drive innovative marketing strategies in 2025 that put a spotlight on fresh, quality, convenience, and value.”
