Jim Dunn and Dave Terry, both with history at the Smith & Wollensky Restaurant Group and Hard Rock Cafes, have launched Prime Blue Grille in Miami. It is the first of what will become a national chain from the newly formed WellDunn Restaurant Group. Inspired by 1930s Craftsman architecture, the downtown Miami restaurant features two-toned wood paneling, stone fireplaces and archways, a wood-fired grill, a color palette inspired by its Miami setting, contemporary furniture, a raw bar, and floor-to-ceiling glass walls with a view of Biscayne Bay. The 8,000-square-foot, 250-seat facility, which opened on June 30, is not yet equipped with Wi-Fi or videoconferencing capabilities, but plans to add those services. The first national restaurant company to serve natural, corn-fed, hormone- and antibiotic-free, 100 percent source-verified prime beef, the venue can accommodate meeting and social events in its four private dining rooms, which seat anywhere from 10 to 90. An indoor/outdoor bar and patio overlooking the bay offers another dining option. The restaurant also has a 1930s-style butcher's market area where customers can purchase prime dry-aged, cut-to-order steaks and the freshest seafood and shellfish. It also features a 300-bottle wine list.
