Chef Ed Brown built a reputation for fish at the Sea Grill, but he’s breaking away from the ocean with his latest restaurant, Eighty One, a posh Upper West Side eatery that includes entrées like dry-aged sirloin with short rib and olive marmalade and braised veal shank with celery-heart gratin, brussels sprout leaves, black trumpet mushrooms, Anson Mills grits, and Jasper Hills cheddar. The restaurant’s 40-seat private dining space features two roving bars (you can move them around the room), a private entrance, and translucent window screens that let in the light from the dining room.
