Paradiso's Yucatan-style shrimp ceviche

In June, Downtown Disney Pleasure Island added a new waterfront dining spot, Paradiso 37. The 5,000-square-foot restaurant seats 285 and serves a diverse menu representing the 37 countries in North, South, and Central America, along with 37 brands of tequila.
There’s outdoor seating for 50 on the lower-level patio overlooking the water, and a semiprivate wine bar on the second floor with an adjacent patio can accommodate 60.
For late-night entertaining, Paradiso is open until midnight, Sunday through Thursday, and 1 a.m. on Friday and Saturday with nightly entertainment.
