Blue Ribbon Sushi Bar & Grill, from brothers Bruce and Eric Bromberg, is now open at the Cosmopolitan of Las Vegas, making it the restaurant brand's first location outside of New York. There's a capacity of 275, with a 170-seat main dining room, 24 seats at the bar, 30 seats at the sushi bar, and a community table with 18 seats. The venue is available for full buyout.
The Asfour Guzy-designed restaurant has an intimate feel, with the venue divided into a number of spaces. The dining lounge and sushi bar—the focus of the space—is seen from the entrance. The bar and main lounge area is made up of a variety of natural woods, metals, and textures. Slatted screens and trees provide privacy and a large communal table adjacent to the main sushi bar is right for larger groups. Walnut wood, fabrics with red and black patterns, and steel and bluestone are among the materials used in the construction.
The venue offers dinner and late-night fine dining. The menu offers sushi and sashimi, as well as an array of appetizers, salads, fish and shellfish, poultry, tempura and fryer items, rice, noodles, vegetables, steaks, chops, lobster, and soups. Dishes include oxtail fried rice, brown rice mixed with oxtail braised in brown vinegar and soy and topped with a bone marrow omelet and spicy sauce; Sawara Kyuri, Spanish mackerel and cucumber dressed with ponzu sauce; and beef marrow bones.
Beverage offerings also include nearly 40 sakes, as well as signature cocktails made with shochu and fresh fruit juices, like the Yuzu-Hi with yuzu juice and St. Germain Elderflower Liqueur. A varied wine list includes varieties from around the world with an emphasis on French and Californian bottles.
