Widely credited with the bite-size comfort food craze, Peter Callahan is also known for the painstakingly detailed presentation of his food. His team creates the stylish but functional trays, displays, bars, and buffets he dreams up, and he recently opened a 6,000-square-foot kitchen and fabrication space in New York. His inventive creations include fried chicken cups served alongside dollhouse-size Coke bottles and pheasant housed under tiny handblown glass domes. In business since 1985, Callahan, 53, credits his success to a vow he made two decades ago to only take on spectacular events. “They didn’t have to have a spectacular budget, but the client had to want something different, special, and out-of-the-box—and that’s what we’ve done ever since.”
