Just in time for fall events—and the corporate holiday parties coming later in the year—we talked to Las Vegas caterers and venues about their latest food offerings for cocktail parties, seated dinners, and other kinds of events. Here's a look at the latest additions to their event menus.

For a bold meeting-break offering, Mandarin Oriental Las Vegas is offering the "Orange-You-Glad" setup, a variety of orange foods in clear glass vessels, including kumquats, tangerines, sour candies, and orange mango cupcakes. The candies and fruits offered in this break option not only lend a cool, monochromatic look, but also offer snacks from the healthy to the indulgent ends of the spectrum.

Celebrating the launch of new weekly business magazine Vegas Inc, Greenspun Media Group had an April cocktail party at Simon at Palms Place that offered an eye-catching display of executive chef Kerry Simon’s junk-food platters. The colorful arrangement included an assortment of treats like freshly made cotton candy, Hostess-style cupcakes, cookies, chocolate caramel popcorn, and cereal treats.

The Muncheeze Truck is now serving grilled cheese at events in the Las Vegas area. Menu items include sandwiches with bacon, grilled sirloin steak, or grilled chicken breast, plus sides like tomato soups and mac bites. A new menu is slated to hit the streets in mid-September.

Lakeside's Lobsterphoria offering allows guests to try wood and stone oven-roasted lobsters from around the world, including West Australia, South Australia, South Africa, and when available, France, Portugal, Morocco, and the Caribbean, prepared a number of ways: stuffed with lobster and crabmeat, rubbed with red chili roasted in garlic and spices, or grilled with citrus-herb butter. The lobsters can be made to order as entrées, appetizers, or platters, and are offered for private events anywhere on the Wynn property.

MGM Resorts’ Events King Dahl designed eight-foot-tall steel ring sculptures to hold food and drinks. They have been used in tandem with colorful floral balls for a P.C.M.A. welcome reception, and to serve martinis at an Estée Lauder corporate event, for looks ranging from feminine to more structured.

Caesars has a new dish for events: heirloom tomato tartar with a wedge of house-made mozzarella cheese and fresh basil, with a sprinkle of lemon couscous, accents of beet confetti, ultraviolet flowers, micro parsley, micro cilantro, and a candied lemon wheel. A rich molasses glaze brings it all together.

Divine Events catering has a new cocktail reception menu. Passed hors d’oeuvres include mini Maryland crab cake sliders with remoulade slaw on Hawaiian sweet rolls; filet mignon crostini topped with a balsamic onion marmalade and blue cheese; seared ahi tuna on tortilla crisp with sliced jalapeño and mandarin segments; crispy duck breast on wonton skins with scallion, cucumber salsa, and hoisin sauce; and tempura goat cheese stuffed zucchini blossoms with a sweet chili garlic sauce.

The Bellagio is now offering marshmallow ribbons: colorful marshmallows in long strings, spun around plexiglass spools. The offering makes for a colorful and playful display alongside other desserts on a buffet.

The Cosmopolitan of Las Vegas is offering frozen treats evocative of the push-pops guests remember from childhood. The treats come in both family-friendly and alcoholic varieties, depending on the event.

A garnish of candy punches up a cocktail, making it sweeter, more colorful, and overall more Vegas. The Sugar Factory’s Lollipop Passion is served in a signature goblet. It’s blended with a mix of melon, coconut, and pineapple. For a splashy look, the drink is garnished with a lollipop. The cocktail can be replicated for off-site events, as can a list of candy-themed cocktails that would work as an accompaniment or alternative to a candy buffet.
