In the former home of Le Cirque in the New York Palace Hotel, the new restaurant Gilt features a changing modern European menu by chef Paul Liebrandt and elegant Gilded Age interiors like the decorative wood-paneled dining room. The bar's mix of classic and up-to-the-minute touches—like a large sculpture that extends over the 75-seat bar—is illuminated with an array of changing colors. The main dining room seats 52.
